After a quiz (I like short answer ones) why not give students immediate feedback and save yourself the grading time. 

I hand out red pencils and announce that anyone with an other than red pencil visible gets an F. 

We go over the correct answers and discuss why it is the correct answer. 

Students are encouraged to write the correct answers and explanations on their own quizzes in red.  If they got the wrong answer and write the correct answer and explanation in red, they can pick up some of the lost credit.

Everybody wins!
